To brew Tie Guan Yin tea, also known as Iron Goddess of Mercy tea, follow these steps:

1. Boil water to around 195-205°F (90-96°C).
2. Rinse the teapot and cups with hot water to warm them up.
3. Place about 1 teaspoon of Tie Guan Yin tea leaves in the teapot for every 8 ounces of water.
4. Pour the hot water over the tea leaves and let it steep for about 1-2 minutes for the first infusion.
5. Pour the tea into cups and enjoy the aromatic and flavorful Tie Guan Yin tea.
